4 half chicken breasts (2 whole breasts or about 375 ml chicken chunks)
50 ml peanut oil
125 ml coarsely broken walnuts
15 ml lemon juice
15 ml butter
25 to 50 ml soy sauce

Directions:
Directions:
Bone and skin chicken and cut into bite sized pieces. Heat oil in frypan until sizzling hot. Add chicken and quickly stir until it begins to brown. Add butter and nuts. Continue to cook (about 7 to 8 min) stirring often. Turn off heat and add soy sauce and lemon juice. Stir until all chicken is well coated with sauce. Serve with rice and garnish with parsley.
