Ingredients: 1/2 c. unsalted butter 1-1/4 c. sugar 1/2 tsp. salt 1/2 c. milk 2 large eggs 2 c. flour 2 tsp. baking powder 2 c. fresh blueberries 1/3 c. sugar 1/2 tsp. cinnamon

Directions:1. Cream butter, sugar and salt. 2. Beat the milk and eggs together and add to sugar mixture. 3. Sift the flour and baking powder and add to mixture 4. Add the blueberries (lightly flour blueberries before adding: place a small amount of flour in a zip-lock bag, add blueberries, and gently shake to coat). 5. Fill muffin cups 3/4 full, then add the rest of the batter to center so they mound up when baked. 6. Mix the 1/3 cup sugar and 1/2 tsp. cinnamon together and sprinkle over muffins. 7. Bake at 400º for 20 minutes. 8. Let sit for 15 minutes before removing from pan. Enjoy! |

Notes: These muffins are my daughter's favorite. She will not eat fresh blueberries as a snack or in a pie, but she loves these muffins. I couldn't ask for a better endorsement for this recipe. I hope you enjoy them also!
