Stuffed Acorn Squash Recipe

Ingredients: 2 acorn squash 1 lb Italian seasoned ground turkey 1 boxes Stove Top Stuffing 1 bag of shredded cheese (what ever you'd like) 4 tsp divided Salt (optional) Pepper (optional)

Directions: |
Directions:Preheat oven to 400º. Cut all squash in half and clean the inside. Place on pan for baking (right side up). Add 1 tsp butter to each squash half and place into the oven. Salt and pepper if you want. Depending on the size of the squash cook for about 45 minutes or till tender. About 15 minutes before your squash is done prepare the stove top stuffing according to the directions on the box and fry up the ground turkey. Drain off any fat from the turkey meat and mix it with stuffing. Once the squash is finished fill each half with the stuffing mixture. Make a nice little mound but not to big. You want to be able to have your squash with your stuffing not go through your stuffing to get to your squash. Sprinkle some cheese on top, return to the oven long enough for the cheese to melt. One whole meal in a squash shell.
**don’t cook your stuffing mixture to early before your squash is done or you could over cook your meal by having to reheat the stuffing by putting it in the oven to heat back up. Or dry it up by trying to keep it warm to long because you made it to soon.** |

Notes: This is a really great easy meal. It’s one of those warm, cozy comfort kind of meals I just love in the fall and winter. It’s also very easy to make, no seasoning required with exception to your own personal taste because everything is already seasoned. So all of the flavors kind of meld together.
