1 box Coconut Ginger Rice
1/2 cup raisins
2 tablespoons vegetable oil
1 large carrot, grated
1 medium red onion, sliced
1 medium red bell pepper, sliced
1 tablespoon chopped fresh ginger
1/2 pound snow peas, trimmed
1 (15-ounce) can black beans, rinsed and drained
1 teaspoon sugar
1/2 teaspoon salt
2 tablespoons freshly squeezed lime juice
2 tablespoons cilantro, chopped

Directions:

Prepare rice according to package directions. When done, stir in raisins. Set aside, keeping warm.

In wok, heat oil. Add carrot, onion and red bell pepper. Stir fry until slightly soft, about two minutes. Stir in ginger and snow peas. Stir fry until snow peas turn bright green, about 30 seconds. Add black beans, stirring together well. Remove from heat.

Put warm rice into a large bowl. Add vegetable mixture to rice. Toss together well. Add sugar, salt, lime juice, and cilantro. Mix well. Serve warm.
