1 whole chicken
pot of water
3 to 4 stalks celery
3 to 4 cloves garlic, minced
Cajun smoked sausage
1 onion, chopped
1 bell pepper, cored, seeded and chopped
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried oregano
salt and pepper, to taste
2 cups long-grain rice

Directions:
Directions:
Boil chicken in the pot of water until cooked.

Cut sausage and brown in a skillet. Cook veggies in a separate pot until tender.

Remove chicken from pot and rip into bite-sized pieces, and set aside.

Cook rice in chicken broth over a medium heat for 30 to 45 minutes. Add chicken, sausage, and vegetables into pot. Adjust seasonings if necessary. Heat and serve.
