1 1/2 pounds top sirloin, cut in strips
1 tablespoon vegetable oil
3 tablespoon fresh ginger, minced
5 large cloves garlic, minced
1 (20-ounce) can pineapple chunks
2 tablespoons soy sauce
4 tablespoons ketchup
6 to 8 green onions, sliced

Rub ginger into meat and let stand for 10 minutes. Brown steak in hot oil until no longer pink. Drain pineapple and set aside. Mix 1 cup pineapple juice (adding more water if necessary to make 1 cup) and ketchup and soy sauce. Pour over meat. Add green onions, pineapple chunks, and garlic. Cook over a low heat for 30 to 40 minutes or until meat is tender. Serve over white rice.
