"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

• 3/4 cup packed light brown sugar
• 1/3 cup butter, softened
• 1 large egg

Directions:
Directions:
1.Preheat oven to 400 degrees. Bake sweet potatoes for 1 hour or until tender. (Sweet potatoes sometimes ooze and make a mess in the oven. I cover a baking sheet with aluminum foil for easy clean up and place the sweet potatoes on it.)
2.Reduce oven temperature to 350 degrees.
3.Let sweet potatoes cool some and then peel the skin off. Place peeled sweet potatoes in a mixing bowl.
4.Add brown sugar, butter, egg, vanilla, salt, and cinnamon.
5.Beat with an electric mixer until smooth.
6.Transfer sweet potato mixture to a greased 11x7-inch baking dish.
7.Bake for 30 minutes. Remover from oven and sprinkle marshmallows on top. Return to oven for 10 minutes.
