8 (4 to 6-ounce) skinless, boneless chicken breasts, cubed
1/4 cup flour
4 tablespoons butter
2 cups whole berry cranberry sauce
4 tablespoons red cooking wine
2 tablespoons soy sauce
2 cloves garlic, crushed
2 teaspoons fresh ginger, finely grated
1 teaspoon ground black pepper

Directions:

Pour flour into a large zip-lock bag, and add cubed chicken and shake to coat. Melt butter in a large skillet, and cook chicken until browned. Remove chicken from the skillet, and keep warm. Add wine and soy sauce to pan and scrape the bottom of the pan. Add remaining ingredients and heat until cranberry sauce is melted and sauce is thoroughly mixed. Add chicken back into the skillet and stir well. Cover with lid and simmer 10 to 15 minutes or until chicken is cooked through. Serve over white rice.
