2 pounds skinless, boneless chicken breasts, cleaned
1/2 cup pitted dried plums halved (aka prunes)
1/4 cup small green olives with pimientos
3 tablespoons capers, with liquid
2 tablespoons olive oil
2 tablespoons red wine vinegar
2 bay leaves
1 tablespoons dried oregano (preferably fresh, but can substitute 1 teaspoon dried)
1/4 cup packed brown sugar
1/4 cup dry white wine
1 tablespoon chopped fresh parsley, for garnish (optional)
salt and pepper to taste

In a large zip-lock bag, combine garlic, prunes, olives, capers, olive oil, vinegar, oregano, brown sugar, white wine, and bay leaves. Combine mixture in bag. Add chicken and seal bag. Marinate chicken in refrigerator overnight or freeze until ready to use.

If previously frozen, defrost mixture in the refrigerator.

To cook, preheat oven to 350 degrees, arrange chicken and sauce in a large glass baking dish, and cook uncovered for 30 to 45 minutes or until chicken is done.

Serve on platter, if desired, pouring juices over the top, and garnish with fresh chopped parsley.
