3 tablespoons butter
1 (2 to 2 1/2 pound) chicken, quartered
1/4 teaspoon salt
1/8 teaspoon pepper
1 onion, halved
2 shallots, chopped
1/4 pound mushrooms
3/4 + 1 tablespoon Riesling wine, divided
3/4 cup heavy cream

Directions:
Directions:
Brown chicken in melted butter 3 minutes on each side. Pour off fat. Season with salt and pepper. Add onion, cover and saute over a low heat for 15 minutes. Add shallots, mushrooms, and 3/4 cup wine. Cover and simmer until juices run clear (about 10 minutes). Transfer chicken and mushrooms to a plate and keep warm. Discard onion, reduce liquid over a high heat to about 1/3 cup (about 2 minutes). Add cream and boil about 1 minute. Stir in 1 tablespoon wine. Spoon sauce over chicken.
