4 chicken breasts
12 ounces spaghetti
1/2 cup butter, divided
1/4 cup flour
1 cup whipping cream
1 1/2 teaspoon salt
2 cups chicken broth
1/3 cup dry white wine or sherry
1 tablespoon lemon juice
1/4 teaspoon pepper
1/4 teaspoon nutmeg
1 teaspoon minced onion
1/2 cup green pepper
1 pound mushrooms
1 (4-ounce) jar pimientos
1/2 cup grated Parmesan

Directions:

Cook and cube chicken. Save broth. Cook spaghetti and set aside. Melt 1/4 cup butter, blend in 1/4 cup flour, then whipping cream, salt, pepper, nutmeg, lemon juice, broth, and wine. Cook over medium-high heat until sauce thickens. Add half of the sauce to the chicken.

Saute onion, green pepper, mushrooms in 1/4 cup butter. Add to spaghetti. Add in other half of sauce and pimientos.

Place in a 13” x 9” casserole. Mix together. Sprinkle with cheese and bake at 375 for 25 minutes.
