4 baking potatoes
2/3 cup butter
1/2 cup finely diced onion
1/4 cup finely diced celery
2 tsp. minced garlic
salt and pepper
2/3 cup flour
5 cups milk
1 cup chicken broth
12 slices bacon, cooked and crumbled
1/2 cup heavy cream
shredded cheddar cheese
sour cream
diced scallions or chopped chives

Directions:
Directions:
Bake potatoes one hour at 400 degrees(I usually microwave them). Let cool a little then scoop out inside of the potatoes and set aside. Melt butter over medium low heat. Saute onion and celery in butter. Season with salt and pepper. Add garlic. Stir in flour to make a roux. Cook about one minute, stirring constantly. Gradually pour in the milk and broth, while stirring constantly. Bring heat to medium and keep stirring until soup start to thicken. Add the potatoes and bacon. Turn off heat and add cream. Season with more salt and pepper if needed. Stir in some cheese.Serve in bowl with some garnishes; sour cream, extra bacon, cheese, scallions, or chives.
