2 quarts broth (chicken or vegetable)
1 onion, diced
1 cup celery, chopped
1 can diced tomatoes with green chile
1 cup chopped roasted green chile
1 bag frozen roasted corn (Trader Joe's)
1/2 bag roasted bell pepper and onion (Trader Joe's)
Whatever veg you think would be good: spinach, carrots, parsnips. Listen to your body, if you think it sounds really good, it probably is.
salt and pepper to taste
fresh lemon juice, if you have lemons

Optional: whatever meat, if you want it. I recommend kielbasa, andouille, chicken or pork.

Saute onion and celery in olive oil until tender
Add chicken broth
Add everything else.
Simmer on low.

I keep on adding water, if it needs it. Broth is good.

About 10 minutes before serving, if you have the lemon, add that.

This is a VERY loose recipe. Whatever you have, whatever you like, add it. You really can't go wrong. We go nuts with the green chile and chipotle, because that should kill whatever bug you might have.
