1 (8-ounce) package light cream cheese
2 tablespoons Dijon mustard
3 green onions, chopped
1/4 cup zucchini, grated
1/4 cup carrot, grated
6 8-inch flour tortillas
12 to 18 large spinach leaves
1 (12-ounce) jar whole sweet roasted red peppers, drained and patted dry
3/4 pound deli turkey, thinly sliced

In a medium-sized bowl, mix together Neufchatel, mustard, onions, zucchini, and carrot.

To assemble tortillas, place each tortilla on a piece of waxed paper. Spread each tortilla with about 1/2 cup of the cheese mixture and spread to within 1/2" from the edge. Cover with 2 or 3 spinach leaves, pressing lightly into cheese mixture. Top each with 1 to 2 pieces of turkey and roasted red pepper, keeping the layers as flat as possible. Roll up tortilla lightly, jelly roll fashion. Wrap each securely in waxed paper.

Refrigerate seam-side down for at least one hour. To serve, cut each roll crosswise into 1-inch slices using a serrated knife. Serve with Ranch dip, if desired.
