1 lb lean pork shoulder or pork tenderloin
2 eggs
1/4 c flour
1 tsp salt
1/4 tsp pepper
2 c salad oil
3 green peppers
4 stalks celery
2 chicken bouillon cubes dissolved in 1 c hot water
1/2 c pineapple chunks drained
1/2 c pineapple juice
3 tbsp. cornstarch
1/2 c sugar
3 tbsp. soy sauce
1/2 c vinegar (or less)
cooked rice

Cut pork into 1" cubes. Beat together eggs, flour, salt and pepper to make a batter. Heat oil in heavy skillet. Dip pork cubes into batter and drop into hot oil. Fry slowly to brown and turn. Drain off excess oil. Cut peppers into 1" squares. Cut celery stalks diagonally into 1" pieces. Add vegetables to meat. Add 1/4 c of chicken bouillon-water mixture, pineapple and juice. Cover and simmer 10 to 15 min until all vegetables are tender and crisp. Combine cornstarch and sugar in a saucepan. Blend in soy sauce, vinegar and remaining 3/4 c chicken bouillon-water. Cook over medium heat, stirring constantly until thick and clear. Pour over meat mixture. Cover and simmer another five minutes. Serve over hot cooked rice.
