Black Beans Cuban Style Recipe

2 lb. black beans
2 large onions, chopped
2 large bell peppers, chopped
1 lb. bacon, chopped
5 garlic cloves, chopped
1 bay leaf
1-2 tbsp. salt
1 tbsp. oregano
2 tbsp. olive oil
1 jar red pimentos, chopped
1 tsp. black pepper
1 tsp. brown sugar
¼ c. cooking sherry
1 tsp. cumin
2 tbsp. red wine vinegar

Wash and soak black beans in water overnight.
In a large Dutch oven or pot, cook beans in the water they were soaking in, over medium heat until tender (add more water if necessary).
In a separate frying pan, cook bacon over medium heat until fat is dissolved. Spoon bacon to separate bowl and set aside. Discard bacon fat except for 1 tbsp. Add olive oil to pan with bacon drippings.
Add onion, bell pepper and garlic, and sauté until onions are tender.
Transfer this mixture to the pot of black beans along with the cooked, chopped bacon. Add the remaining ingredients.
Let simmer for a couple of hours, add more water if needed.
Adjust seasonings and salt to taste. Enjoy!
