1 pound crab
1 red bell pepper, diced
1 clove garlic, minced
1/2 bunch cilantro, chopped
1 egg
8 saltine crackers, crushed
3 tablespoons Dijon mustard
salt, to taste
pepper, to taste
breadcrumbs
chopped peanuts
egg wash (egg-milk)
flour

Jicama Relish:

1 cup jicama, diced
1/4 cup grapes, sliced
1 orange, separated in wedges, no skins
3 tablespoons chopped tarragon
5 tablespoons roasted pine nuts
5 tablespoons olive oil
salt and pepper, to taste

Directions:
Directions:
Clean crab off shell. In a mixing bowl, place crab, pepper, garlic, cilantro, egg, crackers, mustard, and seasoning.

Fold all ingredients together. Form into small cakes. Dredge in flour. Dip in egg wash. Dredge in peanuts. Saute in olive oil until brown, draining on a paper towel.

Cook in a 350 degree oven for 10 minutes. Serve with Jicama Relish.
