Shrimp Casserole Recipe

1 lb. shrimp, raw, chopped
1 small jar pimento (optional)
1 large bell pepper, chopped
1 large onion, chopped
1 stalk celery, chopped
2 sticks butter or margarine
2 cans cream of mushroom soup
4 c. rice, cooked
¼-½ cup green onions, chopped
½ c. cheese, grated
Italian Bread Crumbs
1 small can mushrooms, drained

Directions:
Directions:
Combine bell pepper, onion, celery and cook with two sticks of butter on medium for about 30-40 minutes. Add raw shrimp and mushrooms to above, salt and pepper to taste and cook till shrimp are done, about 30 minutes. Add mushroom soup and green onions. Cook for about 5 minutes. Take off stove, add cooked rice and mix well. Place in casserole dish, sprinkle grated cheese and bread crumbs on top.
Bake at 350°F till cheese melts.

In my version: I never use pimento or bell pepper. I use fresh celery if I have it and celery seed if I don't. If I add mushrooms, they are usually fresh, sautéed. I add fresh garlic with the onion and celery. Also, a little more shrimp makes it better!
