1 Boiled or roasted chicken, chilled
1 cup Mayonnaise * may use plain Greek Yogurt
2-1/2 Tbsp. lemon juice
1/4 cup sliced almonds
1-2 scallions, diced or 1-2 Tbs dried Chives
1/4 cup fresh parsley, chopped or 1-2 Tbs dried
1/4 cup dried cranberries
1-2 celery stalks with leaves finely chopped or 1/2 tsp celery seed
1/2 tsp.fresh ground pepper
pinch sea salt

Directions:
Directions:
Remove the skin of the chicken and debone. Dice the chicken and set aside. In a medium mixing bowl, combine mayonnaise, lemon juice, almonds, onion, parsley and lemon pepper seasoning to make a dressing. Gently mix the chicken in until it is completely coated with dressing. Refrigerate until ready to serve.
