Ingredients: Salami Eggs for 4
14 eggs (Large - if Xlarge - you can use 12) 3 oz sliced salami (not too thin) - “reduced sodium” salami from Trader Joes is great! cracked pepper (to taste - about 1 tsp) adobo seasoning salt (with Pepper) -to taste - about 1 tsp)
14 small tortillas (i usually do both corn and flour)
1 tubs Cream cheese (I prefer whipped - it spreads more easily)
Hot Sauce - we prefer Sriracha, but chipotle tabasco is also good… whatever you like best!
1) Chop the salami into 1/2” pieces 2) Mix the eggs (for scrambled) and add cracked pepper 3) Saute the salami in a large fry pan (a chicken fryer works great). Cook until mostly browned pieces - stir constantly to cook thoroughly and evenly) 4) Add eggs to salami, continue to stir. Add adobo. Cook until finished - not too dry. 5) Warm tortillas in fry pan and store on a plate in a warm oven or put in a tortilla holder.
To assemble:
Take a tortilla, spread with cream cheese (approximately 1T). Add a portion of salami egg mixture - about 1/4 cup. Add hot sauce to taste. Fold and eat.
Serve with Mimosas, coffee, fruit & muffins or Breakfast cake.
Serves 4 people.

2 large eggs per person (plus one extra for every twelve eggs) About 3/4oz of salami per person - more or less to taste About 2-3 tortillas per person About 2 oz of cream cheese person
