1 1/2 cups dried apricots
1/2 cup yellow onion
3/4 cup minced celery (include some leaves)
2 tablespoons butter
1 1/2 quarts stale bread, cut into 1/2" cubes
1/2 teaspoon poultry seasoning
1 1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup minced parsley
1 to 2 eggs lightly beaten, optional
1/3 cup chicken broth (or more if needed)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Cover dried apricots with boiling water and soak 10 minutes; drain and coarsely chop. Saute onion and celery in butter in a skillet over a moderate heat until pale golden. Mix with remaining ingredients, tossing with 2 forks. (For moister stuffing, mix in 1/3 cup chicken broth.) Use to stuff poultry or pork. Or, if you prefer, bake, uncovered, in a well-greased 2.5-quart casserole at 325 degrees about 1 hour or until lightly browned.
