1 cup unsalted butter, softened
1 cup dark brown sugar, firmly packed
1/4 cup light brown sugar, firmly packed
1/4 cup sugar
2 eggs
2 1/2 tsp. vanilla extract

2 cups flour
1 tsp. baking soda
1 tsp. salt
1 1/3 cups sweetened flaked coconut
12 oz. white chocolate chips, good quality
3/4 cup macadamia nuts, coarsely chopped

In a large bowl, beat the butter, brown sugars and sugar until well-mixed. Beat in the eggs and vanilla until light and fluffy. In a medium bowl, stir the flour, baking soda and salt until blended. Add this mixture to the butter/sugar mixture and blend so no white streaks remain. Stir in coconut, white chocolate chips and chopped macadamia nuts by hand. Cover the dough with plastic wrap and refrigerate for at least 2 hours (overnight is even better). Roll the dough into 1-inch balls and place on parchment-lined cookie sheets. Bake in a preheated 350º oven for 18 to 20 minutes. Do not over bake.

I always bought Mrs. Fields White Chocolate Coconut Macadamia Nut cookies. They were my favorites, even more so than their chocolate chip cookies. So I decided to try and find a recipe that came as close to theirs. It took a few months and many tweaks, but I think my cookie recipe can proudly stand up next to Mrs. Fields and hold its own!
