Grandma's Apple Strudel Recipe

6 cups flour
1 pint best-quality vanilla ice cream
1 pound butter

Apple Filling:

2 1/2 pounds baking apples
1 teaspoon cinnamon
1 teaspoon grated lemon rind
raisins (optional)
1/3 cup seedless white grapes
1/2 cup chopped walnuts
6 tablespoons sugar, or to taste

Directions:
Soften butter and ice cream. Mix flour in gradually with a fork, with your hands, or with a pastry blender. Divide mixture into four parts. Roll each part into a ball. Wrap each ball with plastic wrap and then with tin foil. Refrigerate overnight.

The next morning, roll each ball on a floured piece of waxed paper into a large rectangle 1/4" thick. Then cover the dough with apple filling (recipe follows) or with the filling of your choice, such as canned pie filling or a favorite preserve.

After covering the rectangle with whatever filling you choose, roll rectangle into a long jelly roll and transfer the roll onto a lightly greased, flat, metal cookie sheet. Make cuts into but not through the streudel at quarter-inch intervals. Sprinkle with cinnamon and sugar. Repeat process for the remaining three balls of pastry. Bake strudel two rolls at a time in a 350 degree oven for 20 to 25 minutes or until golden brown. Serve with sweetened whipped cream on the side, if desired.

Apple Filling:

Peel and core apples and cut into slices 1/2" thick. Mix all ingredients, but do not add sugar until ready to fill dough.
