1/4 cup plus 1 tablespoon stick butter
1 oz. unsweetened chocolate
2/3 cup unsweetened cocoa
1 1/2 cup sugar
3 large egg whites, lightly beaten

1 cup all-purpose flour
1/2 teaspoon baking powder
vegetable cooking spray

Preheat oven to 325 degrees.

Melt butter and chocolate in a large saucepan over a medium heat. Stir in cocoa, and cook 1 minute. Stir in sugar, and cook 1 minute. Mixture will almost form a ball and will be difficult to stir. Remove pan from heat; cool slightly.

Combine egg whites and egg. Gradually add chocolate mixture to egg mixture stirring with a whisk until well blended. Combine flour and baking soda; add flour mixture to chocolate mixture, stirring well.

Spoon batter into 9" square baking pan coated with cooking spray. Bake at 325 degrees for 30 minutes. Do not overbake. Cool on wire rack. Sprinkle with confectioner’s sugar after brownies cool, if desired.
