1 cup cooked or canned chickpeas, drained (reserved 2 tablespoons liquid)
1/3 cup tahini (sesame seed paste)
1 large clove garlic, peeled and crushed
6 tablespoons lemon juice
1/2 teaspoon salt
1 tablespoons olive oil (garnish)
1 tablespoons minced parsley (garnish)

Puree chickpeas with cooking liquid or reserved liquid from the can, tahini, garlic, lemon juice, and salt by buzzing 20 to 30 seconds with an immersion blender, in an electric blender at high speed, or in a food processor fitted with the metal chopping blade.

Spoon into a small shallow bowl and make a shallow well in the center. Spoon in olive oil and scatter parsley on top.
