1 (14.75 ounce) can canned salmon, drained with skin and bones removed
1 egg
3 tablespoons onion, chopped
3 tablespoons celery, minced
1 tablespoons dried dill
2 tablespoons butter
2 tablespoons lemon juice
1/4 teaspoon lemon pepper
1/4 cup Italian breadcrumbs
non-stick cooking spray

Directions:
Directions:
Preheat oven to 350 degrees. Line a baking sheet with foil and spray with non-stick cooking spray.

Saute onion, celery, and dill in butter until soft. Set aside.

Place salmon in a bowl and crumble. Add in egg, softened vegetables, bread crumbs, lemon juice, and lemon pepper. Mix well. If mixture is too dry to form into patties, add more lemon juice. If mixture is too wet, add more breadcrumbs.

Form salmon mixture into cookie-sized patties, each about 3-inches wide. Bake for 350 degrees and serve with Dill Tarter Sauce.

Technically speaking, these are salmon croquettes, but when our sons were young, it was easier to get them to eat these by calling them salmon cookies.I used the same strategy to get them to eat steamed broccoli by calling it “little trees.”
