Chicken Stir Fry
2 tbsp. sesame oil
2 boneless skinless chicken breast cut into 1/2 in cubes
1- 8 oz. cam water chestnuts chopped
1/2 cup mushrooms minced
1/2 onion chopped fine
3 cloves garlic minced
6 large leaves of iceberg lettuce or cabbage

Stir Fry Sauce
2 tbsp. soy sauce
2 tbsp. brown sugar
1/2 tsp. rice wine vinegar

Pouring Sauce
1/4 cup sugar
1/2 cup warm water
2 tbsp. tamari
2 tbsp. unseasoned rice wine vinegar
2 tbsp. ketchup
1 tbsp. lemon juice
1/8 tsp. sesame oil
1 tsp. hot water
1 tbsp. Dijon mustard
2 cloves garlic, minced

Pouring Sauce
1. In a large bowl, dissolve sugar in 1/2 cup warm water, then add soy sauce, rice wine vinegar, ketchup, lemon juice and sesame oil. Mix well and put in fridge until you are ready to eat.
2.Just before serving, combine 1 tsp hot water with Dijon mustard and garlic and mix in small bowl. Add to the pouring sauce 1/2 teaspoon at a time to taste.
Stir-fry sauce
1.Mix soy sauce, brown sugar, and rice vinegar in small bowl

Chicken Stir-fry
1. Combine oils and add to wok or large frying pan. Heat oil over high heat about one minute. Add chicken and saute until mostly cooked, about 5 minutes.
2.Turn the heat down to medium-high. Add another tbsp. of olive oil to the pan, wait one minute, and then add garlic ,onions, water chestnuts, mushrooms and the stir fry sauce. Stir-fry everything until the mushrooms have cooked through, about 4 min., and remove to a serving dish
3. Serve stir-fry with cold crisp lettuce leaves and top with pouring sauce.

This recipe tastes just like P.F.Chang's! You do not have to use the pouring sauce if you would like to save some time. It is delicious with or without the pouring sauce. My favorite lettuce to use is Romaine lettuce because the leaves are long and sturdy. Enjoy!
