2 Lb Shrimp, peeled and deveined, (or Crawfish)
1/2 Cup (1 stick) Butter
1 medium Onion, chopped
3 (+/-) ribs Celery, chopped
1/2 Bell Pepper, chopped
3 Cups Chicken Stock
1 Tbsp Sugar
1 1/2 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Paprika
1/2 tsp Zataran's concentrated Crab Boil
1 Tbsp (+/-) Cajun Seasoning (i.e. Tony's, Joe's Stuff, etc.)

Directions:
1. Make a Roux - stir flour into melting butter over low heat, stirring constantly until it reaches the color of peanut butter
2. Add the Holy trinity, (chopped onions, celery & bell pepper; also known as Mirepoix); cook while stirring for about 5 minutes
3. Add chicken stock slowly while stirring
4. Add seasonings
5. Sample for taste and adjust seasonings as needed
6. Simmer for about 25 minutes
7. Add shrimp and cook for about 5 minutes more
8. Serve with rice and French Bread
