4 chicken breasts, washed and dried with fat removed and pounded thin
2 tablespoons fresh garlic, minced
2 tablespoons fresh ginger, minced
1 teaspoon olive oil
1/4 cup low-sodium soy sauce
1/4 cup sherry
1/4 cup orange juice
2 tablespoons honey
2 tablespoons peanut butter
3 tablespoons green onions, chopped
1 teaspoon sesame seeds, toasted
1 teaspoon flour to thicken sauce

Directions:
Directions:
Make marinade by combining, oil, ginger, garlic, soy sauce, sherry, vinegar, orange juice, and honey in a large zip-lock bag. Taste the marinade and adjust amounts if you would like. Then add chicken and marinate at least1 hour. Remove chicken from marinade and grill until cooked through.

Place remaining marinade in a small saucepan and and whisk in about a teaspoon of flour. Heat the sauce to a boiling, and boil for several minutes, stirring often. Add a little bit of peanut butter.

To serve, arrange chicken in the center of a large platter. Place rice around the edge of the platter. Garnish with sesame seeds and chopped green onion, and serve the sauce on the side.
