1 rotisserie chicken or cooked chicken, shredded
1/2 cup diced white onion
1 large can cream of chicken soup with 1/2 stick butter, salt and pepper
fresh or frozen chopped broccoli or fresh baby spinach
1/2 cup water
1 (15 ounce) container ricotta cheese
2 or 3 bags shreds mozzarella cheese/Parmesan or Mexican Cheese Mix
1 whole egg
uncooked lasagna noodles

Directions:
Cook Soup with water, onion and seasonings. Cook broccoli. Add in shredded chicken and the spinach to the soup. Mix ricotta, 1 package cheese and the egg. Layer noodles, chicken, Cheese and repeat. Top with other bag of cheese. Cook on 350 for about 30-45 minutes - watch carefully.. Sprinkle with 1/2 cup of mozzarella and remaining Parmesan. Return to oven to melt the cheese and let it sit for 10 minutes before serving.
