8 egg whites
1 tsp. clear vanilla
2 c. sugar
2 tsp. distilled white vinegar

Beat egg whites in a large bowl til soft peaks form, gradually adding sugar, beating well after each addition of sugar, until all sugar is dissolved. Add vanilla and vinegar, beat 1 more minute. Mixture should be stiff and stay in place when spread. Preheat oven to 200°F. Grease a large sheet of aluminum foil with CriscoŽ shortening, and dust lightly with corn starch. Spread the meringue mixture on the foil, to approximately 11"-13" in diameter. Carefully place directly on to middle rack of oven, and bake for about 1 hour. When cool, invert onto a large serving platter. Top with whipped cream and fresh fruit.

You may adjust the temperature and baking time to achieve the whitest possible pavlova. This recipe takes a little trial and error, to prevent the pavlova from overcooking, or becoming brown. The outer edge will be crusty, and inside will be marshmallow.
