1 1/2 c all-purpose flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1 tsp ground cinnamon
1 egg
1 cup mashed bananas (3 medium)
3/4 cup sugar
1/4 cup cooking oil
1/2 cup chopped walnuts or pecans
1/2 cup chocolate chips (optional)

Directions:
Directions:
Grease bottom and 1/2" up the sides of a loaf pan; set aside.
In a medium mixing bowl combine the flour, baking powder, baking soda, cinnamon and salt.
In another bowl combine the egg, bananas, sugar and cooking oil. Add in dry mixture. Stir until just moistened. Fold in nuts and chips (if using).
Spoon batter into prepared pan. Bake at 350 for 50 - 55 minutes or till a wooden toothpick comes out clean. Cool in pan on a wire rack for 10 minutes. Remove loaf from pan and cool on wire rack. Wrap and store overnight before slicing (yea right).
