2 TBS olive oil
2 TBS chopped onions
2 TBS chopped green pepper
1 lb ground beef
1/4 cups soft breadcrumbs
1/4 lb mozzarella cheese
1/2 tsp parsley
1/2 tsp salt
Dash of pepper
Manicotti Sauce

Directions:
Directions:
Mix all ingredients together. Add a little Manicotti sauce and mix well.Stuff manicotti. Fill bottoms of aluminum covered pans with sauce. Place stuffed manicotti side by side in sauce. Cover with sauce to completely cover the manicotti.

Cover with aluminum foil, crimping edge to seal tightly. Place in preheated oven (400 degress) and bake for 40 minutes. After 40 minutes, remove foil and sprinkle with grated mozzarella cheese and allow to bake an additional 5-10 minutes until cheese melts.
