10" pie crust

1 pkg Knox Gelatin
1-1/2 Tablespoon water

2cups Milk
1 cup Sugar
1/2 teaspoon Salt
4 Tablespoons Corn Starch
2 Tablespoons Butter
6 Egg Yolks
1 teaspoon Vanilla
1 pint Heavy Cream
Pinch Nutmeg, grated

Bake pie crust till brown.

In a bowl, dissolve 1 package of Knox gelatin in 1-1/2 tablespoon Water, let sit.

In a double boiler, scald 2 cups Milk.

In a bowl, mix Sugar, Salt, Corn Starch, gelatin, butter and eggs. Add into milk and cook until thick - let cool. When cool, add vanilla then pour all through strainer.

Whip Heavy Cream in separate bowl till stiff peaks appear then fold into cooled, strained pudding mixture. Pour all into pie crust and sprinkle with grated nutmeg.

Chill pie before serving.

This recipe was given to me by a dear friend, Ann Torchia and is a favorite of my daughter-in-law, Karen. And it is made every Christmas and brought to Chris & Karen's house for dinner
