2 cups Flour
1-1/2 Tablespoons Butter
1/2 cup Sugar
1 Egg
1/2 Lemon Zest

Filling
3 pounds Ricotta Cheese
2 cups Sugar
6 Eggs
1 teaspoon Vanilla
1/2 Orange Zest
1/2 Lemon Zest
Pinch of Cinnamon

Directions:
Directions:
Cream Sugar and Butter and add Egg and Lemon Zest, blend flour, dough will be sticky. Refrigerate for at least an hour. Roll into a 10" pie dish (this makes 2)

Preheat oven 350º.

Blend filling well: Ricotta, Sugar, Eggs, Vanilla and Zest and pour into crust - sprinkle cinnamon on top.

Bake at 350º for 1 hour
