1 can of diced tomatoes
Lots of tasty cheese (such as Cracker Barrel)
Eggs

Directions:

Melt the cheese in the tomatoes and thicken the mixture with beaten eggs.
Serve on crackers.

While the instructions for this recipe are sketchy at best it's special because I lifted it from Aunt Virgie's contribution to the book The Seventy-Fifth Christmas. Along with the recipe she wrote: "When Susan was in the fourth grade her Bumpa (Grandpa) was in the hospital and very ill at Christmastime. I didn't do any grocery shopping because we had planned to eat out. We couldn't find a restaurant open so we went home and I made Blushing Bunny, a dish Jack and Susan always enjoyed....When we finished eating Susan said 'This is the best Christmas dinner I ever had.'...Jack and I were so proud of her." It is the only recipe I have of Aunt Virgie's.
