6 bushels of apples
2 to 4 gal. water (or cider)
58 lbs. sugar
3 boxes cinnamon sticks (to taste)

Peel and slice the apples the night before. Store in wash tubs lined with plastic. The next day start wood fire outside at 6:15 a.m. Prepare copper kettle by cleaning with water, vinegar, and salt, rinse. Add apples and water, stirring constantly with wooden paddle. Add four silver dollars to keep apples from sticking to bottom of kettle. Cook for approx. 8 hours. Never leave unattended…. Stir constantly. Add cinnamon sticks and sugar. Cook for another 2 hours. Mixture should be sticky and glossy. To test, put some apple butter on a plate and turn it sideways. If it doesn’t run, it’s done. Pull off fire and fill canning jars and seal the lids. This must be done quickly for jars to seal properly.
Yield: approx. 72 quarts

This is not family recipe.... but is very close. We would not have used cider and I expect used some ground cinnamon. The cleaning the kettle is right on as is the placement of silver dollars in bottom of kettle and ALWAYS stirring. I do not recall if we used a 20 or 22 gallon copper kettle.
