2 T. fat

1/2 C. thin-sliced onions

2 T. diced green pepper

1/2 lb. ground beef

1/2 C. boiling water

1 C. canned tomatoes

1 1/2 T. chili powder

2 T. cold water

1/4 t. salt

1 t. sugar

1 ˝ cloves garlic, minced

2C. kidney beans, undrained

Cook onions and green pepper in fat until tender. Add meat; cook, uncovered, until meat browns. Add boiling water, tomatoes, chili powder mixed with cold water till smooth, salt, sugar, garlic. Simmer, covered, 1 hour. Uncover, simmer ˝ hour. Add water if mixture thickens too much. Add beans, heat.

This is the basic chili recipe I started with, and have *greatly* modified it. I increase all major ingredients (onions, green pepper, meat, tomatoes and chili powder) to get the taste I want. I add one can of beer to supplement the water. I OMIT the beans!

During the last part of simmering the chili, I mix masa and water until smooth and stir it in to thicken the chili – be careful not to add the masa too quickly – you can end up with “masa balls” in your chili!

The original recipe came from Louise Lowry in the early ‘70’s. Chili and cornbread was a Christmas Eve tradition in the (Bob) Lowry household, and we adopted it in our household for a time. The beer and masa were things my brother, Robert, used when making chili.

This chili has a little bit of several people in the finished product. Modify it as you like and make it your own.

5/23/15 – I recently tried a new chili recipe – it has cubes of lean brisket, browned and then added to the chili. Pretty darn tasty! You may want to add some brisket, too.
