2 (14.5 oz.) cans diced tomatoes
2 tbsp. extra virgin olive oil
4 tsp. garlic, minced
⅛ tsp. dried red pepper flakes, or to taste
1 tsp. oregano
½ c. olives
¼ c. capers, drained
1 tin anchovies
salt and pepper, to taste
½ c. fresh basil, chopped, as garnish (optional)
1 lb. pasta

Directions:

Heat olive oil in a skillet and sauté garlic and red pepper flakes quickly to release flavor. Add tomatoes with juice; bring to a boil. Simmer sauce. Add oregano, olives, capers and anchovies at one time. Simmer until the desired consistency is reached. Season to taste with salt and pepper. Cook pasta until al dente. Serve sauce over hot pasta and garnish with basil if desired. It is very quick to make, maybe 5-10 minutes (not counting cooking the pasta). It can also be made way ahead of time and reheated very successfully.

This is another of our favorite dishes, which takes it's name from the Italian word for prostitute. The prostitutes didn't have much time between clients so this was a dish they liked to make because it was quick.
