1 Basket cheese
2lb Large mozzarella cheese
1 1/2lb Farmer cheese
1 Abruzzi sausage
1 Pepperoni sticks
½lb geno salami
½lb prosciutto
3lb Prosciuttini Ham
½lb Capicola
1 Soppressata (stick)
8oz grated cheese
1 ½ dz jumbo eggs hard-boiled
6 Raw jumbo eggs



Dice and mix all of the above.
Set aside and mix dough


*Dough
6 cups flour
8 jumbo eggs
1 tsp baking powder
½ tsp salt
¾ cup oil

Directions:
Directions:
Mix all dry ingredients first – make a well & pour oil & eggs into well. Mix well – remove from bowl & knead on board – place back in bowl and cover with a damp paper towel.

Cut a piece and roll out
Fill with filling
Fold dough over filling and trim
Roll up edges and seal with a fork
Place on a cookie sheet and brush with egg yolk

Bake at 350 for 30 minutes or until golden brown
*** Do not roll out crust two thin and do not over stuff.

*Using this recipe, three times with the above fillings you will get approximately 9 pies depending.
It is not recommended that you triple this dough and make it all at once. By using this recipe it is much easier to mix and work with the dough.
