4 eggs, beaten
2 (4oz.) cans chillies, chopped
8 oz. Jack cheese
8 oz. sharp Cheddar cheese
1 (12oz.) can evaporated milk
2 tbsp. flour
½ tsp.salt

Directions:

Heat the oven to 350°F. Mix all ingredients together in a medium bowl and pour into a well greased 11x7 casserole dish.
Bake for 35 minutes or until a knife inserted comes out clean.

This is a very easy dish. If you prefer your casserole spicy, you can add hot chillies, hot sauce or cayenne pepper. You can also add bacon or sausage which have been pre-cooked and crumbled.
