Ingredients:  
Ingredients:  
1/3 cup olive oil
2 cloves minced garlic
1/2 cup chopped carrots, celery and onions
1 lb boneless skinless chicken diced and cooked
8 cups chicken broth
1 can Italian stewed tomatoes (12 1/2 ounce)
1 cup small pasta, cooked
4 cups loosely packed escarole
1 can cannellini beans undrained (19 oz)
salt and pepper

Directions:
Directions:
Heat oil over medium heat, add garlic and saute one minute then stir in carrots, celery and onions and cook 4 minutes.
Add cooked chicken
Add broth and tomatoes.
Increase temperature to high, bring to boil then add cooked pasta and reduce heat.
Simmer uncovered for 10 minutes
Add escarole and simmer 20 minutes.
Add drained beans and salt and pepper and cook 5 additional minutes.
