3 pounds Sweet Potatoes (boiled, peeled & mashed)
1/4 lb butter, melted
2 cups Sugar
6 Eggs (whites and yolks separated)
2 teaspoon Vanilla
Pinch of Cinnamon
Milk, as needed
8"-9" Pie Crust (Pillsbury Crust)

Preheat Oven 350

In a bowl mix sweet potatoes with melted butter, sugar and egg yolks. Put through a strainer to get all lumps out. Add milk to make consistency thinner (like Grandmom liked her Oatmeal). Beat egg whites and vanilla in separate bowl, then add to potato mixture. Pour into pie crust, sprinkle with cinnamon. Bake at 350º for 30-40 minutes.
