1 large bag of mini carrots (1 pound)
3/4 to 1 stick of melted butter
3 T flour
1 tsp. vanilla
3 eggs
1/3 c. sugar
dashes of salt, cinnamon and nutmeg
Topping:
3 T. brown sugar
2 tsp. softened butter
1 cup cornflakes or crushed nuts

Directions:
Directions:
Boil carrots until soft. Put in a food processor or blender until soupy. Mix in all other ingredients. Bake at 350 degrees for 55 minutes.

If freezing, bake 40 min. then put on topping and reheat for 15+ minutes.
