1 cup oil
1 1/2 cups sugar
3 eggs
2 cups flour
2 tsp cinnamon
2 tsp baking soda
2 tsp vanilla
1 tsp salt
2 cups grated carrots
1 cup raisins
1/2 cup crushed pineapple drained

Icing
1/2 cup butter
8 oz cream cheese
2 tsp vanilla
4 cups icing sugar

Directions:
Directions:
1. Preheat oven 350 F.
2. Grease a 9 x 13 pan.
3. Beat oil, sugar, eggs and vanilla.
4. In a separate bowl combine flour, cinnamon, salt and raisins,
5. Add dry ingredients
6. Mix in carrots and pineapple.
7. Pour into 9 X 13 pan and bake for 45 min to 1 hour or until toothpick comes out clean from center.

8. For icing, beat butter and cream cheese until smooth, add icing sugar slowly and vanilla, beat tip fluffy.
