4 boneless skinless chicken breast
1 c. yellow onion chopped
1 c. celery chopped
2 tbsp butter
2 zucchini sliced
2 yellow squash sliced
4 cans chicken broth
1 lg. can diced tomatoes
1 can Rotel tomatoes
1 sm. can tomato sauce
1 can corn
2 tbsp ground cumin
2 tbsp chicken bouillon

Directions:
Directions:
Boil chicken in broth.
Remove chicken to cool (save broth).
Shred chicken - set aside.
Sauté onion and celery in butter.
Add cumin, zucchini, squash, onion & celery to broth.
Bring to a boil until vegetables soften, then add remaining ingredients including shredded chicken. Add water if needed. Simmer 30 minutes and serve over tortilla chips and top with shredded mozzarella!
