1 peeled or scrubbed potato per serving
1 T oil per potato
1 t butter per potato
salt and pepper to taste

Grate potatoes into colander and rinse under running water to remove all starch. Dry potatoes completely. (I squeeze them in a terry kitchen towel.) Heat a heavy fry pan on a medium high flame until hot. Add oil. When oil is hot, add butter. As soon as the butter is melted, add the potatoes to the hot oil mixture and stir to coat all potato shreds with the oil/butter mixture. Allow to brown on the bottom side, then flip potatoes, season with salt and pepper, and cover -- reducing heat -- until potatoes are cooked through. Flip again to crisp up the top side and serve hot.
