4 tbsp. fat
4 thick pork chops
salt and pepper to taste
4 thick slices onion
4 green pepper rings
4 tbsp. uncooked rice
3 c stewed tomatoes
1 c diced celery

Directions:
Directions:
Melt fat in skillet and brown chops, about 15 min. Arrange chops in skillet and top each with slice of onion and green pepper ring. Place 1 tbsp. rice in each ring. Pour tomatoes over meat and add celery. Cover and cook at slow simmer for 1 hour.
