1 pint cooked gooseberries (2 1/2 - 3 c. frozen)
1 1/2 c. sugar
2 Tbsp. flour
pinch baking soda
1/8 tsp. salt
5 Tbsp. heavy cream (may substitute 3 Tbsp. milk)

Butter (optional)

Directions:

Mix and pour in pie shell. Dot with butter, optional. Add top crust. Sprinkle with sugar. Bake for 15 minutes at 400º F; then another 35-40 minutes at 325º F.

Mom made gooseberry pies from the berries grown at their house in Higginsville. The bush came from a start from Blanche Thompson, a neighbor and co-worker of Mom's at the Garment Factory. When the house was sold, I dug up part of the bush and transplanted it at my house in Olathe, KS.
