1 (3-oz.) pkg. lemon flavored gelatin
1 c. boiling water
1 (8-oz.) pkg. cream cheese
1/2 c. sugar
1 tsp. vanilla
1 (13-oz.) can Milnot (evaporated milk), whipped
3 c. graham cracker crumbs
1/2 c. butter or margarine, melted

Dissolve gelatin in boiling water. Chill until slightly thickened. Cream together the cream cheese, sugar and vanilla; add gelatin and blend well. Fold in stiffly whipped Milnot. (This can be done with an electric mixer.)

Mix graham cracker crumbs and melted butter together. Pack 2/3 of mixture on bottom of 9x13x2 (or larger) pan. Add filling and sprinkle with remaining crumb mixture.

Chill several hours or overnight. Cut into squares and serve plain or garnished with fruit.

One of Mom's standard desserts in her later years. Especially good with strawberries!

Note the reference to allowing the use of a mixer. Thankfully we don't have to whip the Milnot by hand!
